Hawaiian Inspired Breakfast Plate
One of my favorite parts about Hawaii is easily the food. Being situated in the pacific, the tropical islands are the ideal climate for growing fruit and an abundance of it. Not only does Hawaii have access to an abundance of tropical fruits, but the quality and nutrient density of the fruits is that much higher than other places because of the fact that it is grown and picked locally, in season. Imported fruits often loose a high amount of their nutrients during the shipping process, which is why sourcing local fruits and vegetables is a key part in a consuming a more nutritious diet.
While I was living in Hawaii, one of my favorite fruits that I consumed almost daily was Papaya. Papaya is an incredible fruit for various reasons, the most important being the fact that Papayas contain a digestive enzyme called papain, a natural digestive enzyme that can help break down food while also helping you better absorb the nutrients from that food.
While unfortunately I cannot source local Papaya where I live now, I still love to recreate this tropical breakfast plate and bring a little piece of Hawaii into my kitchen.
To balance out blood sugar in the morning, I always make sure to pair consuming fruit with adequate protein and carbs to keep stability in my mood and energy throughout the day. Crispy turkey bacon with hot honey is the perfect combination to this overnight chia seed oats filled papaya boat.
Ingredients
1/4 or 1/2 papaya seeded
2 tbsp coconut chia seed overnight oats recipe
Handful blueberries
1/4 banana sliced
Sprinkle GF granola
2 pieces organic turkey bacon
Directions
Slice your papaya in half, then into another quarter if desired.
Spoon out the seeds in the middle
Add a few tbsp of the chia seed overnight oats recipe
Add a sprinkle of gluten free granola
Top with blueberries, banana slices, and honey or almond butter (optional)
In a skillet, on high heat, add a drizzle of avocado oil
Once hot, add your turkey bacon slices, let fry and become crispy, flipping on each side until cooked to desired consistency.
Serve alongside your papaya boat and enjoy this hawaiian inspired breakfast plate.
