Macademia Nut Basil Pesto
I have found that the secret to creating simple yet nourishing and tasty recipes lies in the sauce. Any simple meal can turn into something so flavorful with just a few ingredients thrown into a blender or food processor. This macadamia nut basil pesto has become a weekly staple for me, which I will often make a big batch of on Sundays and use throughout the week to put on toasts, eggs, salmon bowls, veggie bowls and pasta!
Most store bought pestos contain low quality dairy, refined oils, and other ingredients that simply do not belong in there. That is why I have perfected this macadamia nut pesto to share on here instead. Since basil is a main ingredient in this sauce, I discovered that purchasing a basil plant from the grocery was the most cost efficient & convenient way to continue creating this sauce weekly.
Ingredients
2 cups fresh washed basil
1 cup kale (de stemmed)
1/2 cup extra virgin olive oil
1 juiced lemon
pinch sea salt & black pepper
1/3 cup nutritional yeast
2 large garlic cloves
1/4 cup macadamia nuts
Simply, in a blender, add all ingredients and blend on high until creamy. Add more olive oil as needed, and extra macadamia nuts if you prefer a sauce on the thicker or crunchier side!
Use to top on roasted veggies, salmon, salads, toast, as well as turning it into a pesto pasta!
