Steak & Eggs Nourish Breakfast Bowl

Breakfast truly is the most important meal of the day, especially for women. When we eat breakfast, we are essentially “breaking our fast”. This means whatever we first consume is going straight into our blood stream, which is why consuming something balanced with protein, carbs & healthy fats is so important. This prevents from spiking your blood sugar and creating an energy crash later in the day.

As much as I am a sweet person and crave fruits, smoothies & yogurt bowls, I aim to center my breakfast around a meal like this, and I will have a piece of fruit after or along the side. I noticed this made a huge difference in my satiation, energy levels and mood. If you are looking to start eating a more blood sugar balancing breakfast, let this recipe be your start.

Ingredients

  • 1 or 2 cage free organic eggs

  • 1 3 oz piece of organic grass fed steak

  • 1/2 organic sweet potato peeled

  • 1-2 tbs Saukraut

  • handful of blueberries or any fruit of choice (blueberries are low glycemic fruits, meaning they cause less of a spike in blood sugar than other fruits)

  • tbs ghee or grass fed butter

  • tbs olive oil for drizzling

  • sea salt & pepper

  • tsp turmeric (for the turmeric egg)

Directions

For this specific breakfast bowl, I used leftover steak from dinner, therefore I simply had to reheat the steak on the skillet for a few minutes. If you are just cooking your steak, no worries, simply slice your filet into strips, coat with salt and pepper, and add to a buttered skillet on medium heat. Cook thoroughly until desired temperature. Leave your pan on, crack one to two eggs, and sprinkle the turmeric. After a few minutes, I like to add a splash of water to help the egg continue to cook but keep the egg whites soft. Cover with a lid and cook for three-four minutes. For the sweet potatoes, I like to meal prep these all at once and store in the fridge to simply reheat on the skillet as well. To bake the sweet potato to have prepped for this breakfast, set your oven to 425 degrees Fahrenheit, simply peel and slice into fry like wedges. On a baking sheet, add your sweet potato, drizzle with avocado oil or ghee, sprinkle with sea salt & pepper and cook for about 25 minutes. Add your egg, steak and cooked sweet potato wedges onto a plate, add sauerkraut, drizzle with olive oil, and serve with a side of fresh blueberries.
