Grass Fed Ground Beef & Vegetable Bowl

Once I started incorporating high quality animal protein back into my diet, I have never felt better! My body personally thrives on a high protein diet and I have found that grass fed ground beef does amazing with my digestion. I feel nourished, satisfied and fueled after I eat this ground beef & vegetable bowl, making it the perfect lunch or dinner.

The combination of ground beef, sweet potatoes, and broccoli is super satisfying and filled with so many wholesome nutrients. I love to add beets, sauerkraut and cucumber for a cold crunch and extra addition of nutrients. Drizzled with my homemade pesto to finish.

Ingredients

  • 1/4 pack of grass fed ground beef ( I cook all at the same time and save leftovers)

  • 1/4-1/2 sweet potato diced

  • 1/2 cup broccoli florets

  • 2-3 vinegar beet chopped

  • 1 tbsp sauerkraut

  • 1/4 english cucumber sliced

  • handful of cilantro to top

  • 3 tbsp homemade pesto recipe

  • 1 tbsp ghee

  • 1 tbsp avocado oil

  • 1 tsp Celtic sea salt

    Directions

  • In a skillet, on medium heat, add ghee, then add your ground beef

  • Let cook for 15 minutes, stirring every few minutes

  • Preheat the oven to 425 degrees F

  • Add your diced sweet potatoes and broccoli to a baking sheet drizzle with avocado oil and add to the oven. Let cook for 20 minutes.

  • Once your ground beef and vegetables are done cooking, add your ground beef to the bowl, then your broccoli and sweet potato.

  • Add your beets, cucumber, sauerkraut & cilantro.

  • Drizzle with the homemade basil pesto

  • Sprinkle with Celtic sea salt
