GF Pesto Pasta with Chicken Sausage
The perfect last minute weeknight meal for me is always this gluten free pesto pasta. I love making a big batch of my homemade mac nut pesto pasta at the beginning of the week to easily recreate recipes like this one. It’s comforting, delicious & packed with healthy fats, greens & protein from chicken sausage.
I’ve posted a full recipe of my macadamia nut pesto sauce, but it is made simply by blending macadamia nuts, kale, basil, garlic, olive oil, nutritional yeast, sea salt & pepper.
For the pasta, all you will need is a gluten free noodle of choice, broccoli florets & chicken sausage, making this an easy last minute option to nourish your body and comfort your soul!
Ingredients
- 1 box gluten free noodle of choice (I prefer spaghetti with this one)
- 1 cup organic broccoli florets
- 1 link organic chicken sausage
- 1 tbs avocado oil
- 1 tbs olive oil
- 1 cup of my homemade mac nut basil pesto sauce
Directions
- Bring a pot of water to boil and cook pasta according to box instructions. In a skillet, on low to medium heat, add a tbs of avocado oil, then add your broccoli florets. After a few minutes, add your sliced chicken sausage and let cook until desired temperature ( I prefer mine a little crispy if you wan to increase the heat slightly). After your pasta is finished, drain, transfer back to the pot, and add the cup of pesto sauce. Stir completely, pour into a bowl, add your chicken sausage & broccoli, drizzle with olive oil to finish. Enjoy!
