Sunny Side Turmeric Egg & Pesto Sourdough
I used to be such a sweet person for breakfast, but after learning about balancing hormones and blood sugar, I found out how important basing my first meal of the day around protein, carbs & healthy fats was. Now I crave something like this sunny side pesto sourdough to start off the day on a balanced and nourishing note. It keeps me full and ensures I get greens in first thing in the day.
What’s special about this sunny side egg is that it’s sprinkled with fresh turmeric powder for an anti inflammatory supplement. Basing the toast with my homemade basil pesto packed with fresh greens, combined with the satiating turmeric egg and sliced radish for a crunch, this toast is both wholesome and flavorful.
Ingredients
- 1 organic cage free egg
- 1 slice high quality sourdough
- 1-2 small radishes sliced
- 1 tbsp olive oil
- 1 tbsp ghee
- 1 tsp turmeric powder
- sea salt & pepper
- 2 tbsp homemade basil pesto sauce (recipe linked here)
Ingredients
- In a skillet, on low to medium heat, add a tbsp of ghee and let melt evenly on pan. Crack one egg, sprinkle with turmeric and turn to medium/high heat. Add a splash of water and cover with a lid. Slice radish into thin slices and set aside. In a toaster, add your sourdough and cook until crispy. Once your toast is ready, set on a plate, spread your pesto, add the egg and sliced radish. Drizzle with olive oil and finish with sea salt & pepper.
